The Spotlight Superfood

Kale is the ultimate superfood. One cup of kale contains 684% of your daily recommended value of vitamin K. It's also a great source of vitamin A, calcium, fiber, and vitamin B-6. 

 

Kale can be tossed into salads and smoothies, or enjoyed on its own. Here is a simple recipe for great-tasting kale chips. 

 

Kale Chips

  • Preheat oven to 375 degrees.

  • Rinse and dry 1 large bunch of kale, then remove the stems and tough center ribs.

  • Rip the kale into large pieces, toss with a little olive oil, then sprinkle with some salt and pepper.

  • Bake until crisp, about 10 to 15 minutes, checking frequently. (They can burn easily!)

 

**Add sunflower butter pureed with fruit like mango nutritional yeast flakes,  for extra flavor
